Ruby Mountain Venison Short Ribs

3 lbs. venison ribs, cut into 3" lengths
1 Tbsp. salt
1 qt. warm water
1 tsp. paprika
1 large white onion, chopped
1/2 cup tomato catsup
1/4 cup apple cider vinegar
2 Tbsp. water
2 tsp. chili powder
3 Tbsp. bacon drippings

Dissolve the salt in the water and soak venison ribs overnight. Remove the ribs and wash with fresh water. Parboil in a pressure cooker for 30 minutes at 10 lbs. pressure. Remove the ribs from the pressure cooker and place the ribs in a frying pan. Mix the remaining ingredients and pour over the ribs. Bake in a 375- degree oven for a bout 1 hour or until the ribs are tender and browned. Serves 4 to 6
