I'm going on this hog hunt in a few weeks.
The owner of the hunting operation has offered 2 fallow doe to us to cull from the herd.
He said we could have them for $300 each.
#1: Is this a good deal?
#2: I've heard that fallow is the best venison on earth, is this so?

I would say without a doubt it would be axis deer that is so outstanding J, Fallow is pretty good though honestly.

That is about the going rate, best to see what they are going for at market and that is about the price you should pay, but the guy needs to make a little money to keep business going. The money will be going towards further conservation on the property most likely, new fence, feed, vet bills etc.

My buddy in TX charges us anout $250 an axis deer but we hunt with him at least one time a year and twice some years.

You are not getting whacked bad by any means

Fallow deer is excellent meat. I shot one last October and my family and I are very pleased when it's on the dish.

Price wise my guess it's competitive and maybe lower than some ranches.

Good luck on your hog hunt.
